How to make garlic scape butter

Garlic scape butter
 
Idea to transform garlic from your vegetable garden into a consumer product
 
After the harvest season or simply when a particular Alliaceae crop is ready for harvest, one may find themselves with an abundance of raw material.

Kevin Prescott presents his techniques and recipes for transforming this top-quality raw material to promote improve its self-sufficiency.

In this article, Mr. Salut! shows us how he practices food self-sufficiency by transforming garlic from his vegetable garden into garlic scape butter.
 
 
 
 
2. What can we do with... The Garlic?
 
2G - Garlic Scape Butter!
 
Ingredients :
 
  • 4 pounds of garlic scapes

  • 4 pounds of salted butter or 2 pounds of margarine and 2 pounds of salted butter

  • 4 tsp of lemon juice
 
 
 
 
 
Directions :
 
 
  • Let the butter soften at room temperature.

  • Wash the garlic scapes.

  • Cut the scapes into several pieces and put it in the food processor.

  • Chop into small pieces.

  • Mix the butter, lemon juice, and chopped garlic scapes.

  • Spread onto a baking sheet lined with parchment paper.

  • Freeze until semi-firm.

  • Remove and cut into approximately 32 sticks of ¼ pound each.

  • Return to the freezer until firm.

  • Vacuum-seal the sticks and freeze.

☆☆☆ Important notice ☆☆☆
 
Use the butter within a maximum of 10 days after thawing and keeping it in the fridge!

After this period, the butter is no longer safe for consumption and may pose a health risk.
