How to make garlic scape salt

Garlic scape salt
 
Idea to transform garlic from your vegetable garden into a consumer product
 
After the harvest season or simply when a particular Alliaceae crop is ready for harvest, one may find themselves with an abundance of raw material.

Kevin Prescott presents his techniques and recipes for transforming this top-quality raw material to promote improve its self-sufficiency.

In this article, Mr. Salut! shows us how he practices food self-sufficiency by transforming garlic from his vegetable garden into garlic scape salt.
 
 
 
 
2. What can we do with... The Garlic?
 
2A - Garlic Scape Salt!
 
Ingredients :
 
*100 garlic scapes

*1 kilogram of salt (pickling salt salt, if you're doing fermentation)

*Produces coarse salt. To obtain fine salt, blend in a food processor until a fine powder is obtained. Salt is at approximately 50% concentration.

Useful for knowing exact amounts for seasoning and fermentation!

Directions :
 
 
  • Wash.

  • Cut the garlic scapes into 1/4 inch pieces.

  • Preheat the oven to 250°F (120°C).

  • Put the leaf pieces in a food processor until they form a paste/cream.

  • Add some salt to the pieces in the food processor to draw out the water and make the work easier.

  • Mix the salt into the paste/cream.

  • Spread the mixture onto a large baking sheet lined with parchment paper.

  • Dry in the oven for 2 hours, stirring every 15 minutes (if it's not completely dry, continue until it is).

  • Let cool.

  • Transfer into a spice jar.
