Idea to transform onions from your vegetable garden into a consumer product
 
After the harvest season or simply when a particular Alliaceae crop is ready for harvest, one may find themselves with an abundance of raw material.

Kevin Prescott presents his techniques and recipes for transforming this top-quality raw material to promote improve its self-sufficiency.

In this article, Mr. Salut! shows us how he practices food self-sufficiency by transforming onions from his vegetable garden into onion flakes.
 
 
 
 
3. What can we do with... The Onion?
 
3C - Dehydrated minced onion or dried minced onion or onion flakes!
 
If your onions from last year are starting to look worse or you simply have too many onions in the fall, consider making dehydrated miced onion (flakes) so that nothing is lost.
 
Ingredients :
 
  • I recommend using red onion. The taste is by far the best with its sweet character.
 
 
 
 
Directions :
 
  • Peel the onions.

  • Cut the onions into quarters.

  • Put the quarters in a food processor and chop roughly.

  • Put parchment paper on the trays of your dehydrator.

  • Spread the onion on the trays, ¼ inch thick and as evenly as possible.

  • Put in the dehydrator at 125 °F until the onion is completely dehydrated. *The time varies depending on several factors (ambient humidity, food humidity...).

  • Put back in the food processor to eliminate any clumps and to cut your pieces to the desired size.

Use :
 
Sprinkle everywhere on your dishes (salads, spaghetti, etc.). With its sweet side, it can even be eaten directly. It's really good!

*For decorative use, use a thin mandoline instead of a food processor and place in a single layer on the dehydrator tray without overlapping.
