Onion salt
 
Idea to transform onions from your vegetable garden into a consumer product
 
After the harvest season or simply when a particular Alliaceae crop is ready for harvest, one may find themselves with an abundance of raw material.

Kevin Prescott presents his techniques and recipes for transforming this top-quality raw material to promote improve its self-sufficiency.

In this article, Mr. Salut! shows us how he practices food self-sufficiency by transforming onions from his vegetable garden into onion salt.
 
 
 
 
3. What can we do with... The Onion?
 
3A - Onion Salt!
 
Ingredients :
 
  • 10 lb of onion
  • 1.36 kg of salt (pickling salt if you're fermenting)
*Salt at about 50% concentration. Useful to know for precise measurement in seasoning and fermentation purposes.

**Yellow onions will give more flavor to your recipes.
 
 
 
 
 
Directions :
 
 
  • Peel the onions.

  • Cut the onions into squares.

  • Put the quarters in a food processor and blend into a puree/paste.

  • Preheat the oven to 250°F.

  • Mix the salt into the puree/paste.

  • Spread the mixture onto two baking sheets lined with parchment paper.

  • Dry in the oven for 4 hours or more, stirring every 15 minutes (if it is not completely dry, continue until it is well-dried).

  • Allow to cool.

  • Put the mixture back into the food processor to grind into a fine powder.

  • Transfer into a spice jar.
