Mexican Pie
 
  STEP-BY-STEP DIRECTIONS :
 
 
  Easy Pie Crust

In a large bowl, combine the flour and salt.

Cut in the shortening until the mixture resembles coarse crumbs.

In another bowl, mix the egg, water, and vinegar.

Add this mixture to the flour mixture all at once and mix with a fork to form a ball of dough.

Wrap the dough ball in plastic wrap and refrigerate for a few hours before using.
 
 
 
  Mexican Pie

Preheat the oven to 375°F.

Grease three pie plates.

In a deep skillet, combine the ground beef, ground pork, onions, red pepper, celery, carrots, corn kernels, mixed vegetables, garlic, basil, oregano, salt, and pepper. Brown the mixture.

Let it simmer for 30 minutes, then drain.

Add the chili sauce, ketchup, relish, and tomato soup. Simmer for an additional 10 minutes.

Let cool.

Place a pie crust in each of the prepared pie plates and pour in the cooled mixture.

Top with grated cheese and cover with a second pie crust.

Make slits on top.

Bake in the oven for 40-45 minutes, until the top is golden brown..

  Easy Pie Crust
   
  2 ½ cups all-purpose flour
1/4 teaspoon salt
1 cup shortening
1 egg
1/4 cup cold water
1 tablespoon white vinegar
 
   
  Mexican Meat Pies
   
  1 lb ground beef
1 lb ground pork
1 large onion, finely chopped
1 red pepper, finely chopped
1/2 cup celery, finely chopped
1 carrot, finely chopped
1 cup corn kernels
1 can of mixed vegetables (macédoine)
1 clove garlic, finely chopped
Salt, pepper, basil, and oregano to taste
1 cup chili sauce
1/2 cup ketchup
1/2 cup sweet green relish
1 can tomato soup
Grated mozzarella cheese or to taste
