WILD STRAWBERRY JAM

Chapeau de chef - Les recettes du Pépére

Wild Strawberry Jam

  STEP-BY-STEP DIRECTIONS :

Place your strawberries in a pot. Add one tablespoon of water to your wild strawberries in the pot and sprinkle one tablespoon of sugar on top of the strawberries.

Let sit for 2 hours.

On very low heat, let your mixture simmer and ensure that they do not stick to the bottom. Stir as little as possible to avoid crushing the strawberries. The mixture should not boil, but gently simmer.

A broth from the strawberries will appear after about 15 to 20 minutes of cooking. Add your teaspoon of cornstarch and dissolve it completely.

Let simmer for another 10 to 15 minutes and make sure your mixture does not stick to the bottom.

Remove from heat and taste the result, add the other tablespoon or more of sugar if needed.

Pour everything into a container suitable for refrigeration, let your jam cool for 15 to 20 minutes at room temperature, then refrigerate for 3 to 4 hours.
