garden into a consumer product |
|
|
After the harvest season or simply when a particular
Alliaceae crop is ready for harvest, one may find
themselves with an abundance of raw material.
Kevin Prescott presents his techniques and recipes for
transforming this top-quality raw material to promote
improve its self-sufficiency.

self-sufficiency by transforming garlic from his
vegetable garden into garlic powder. |

Ingredients : |
|

 |

Directions : |
|
|
|
|
- Peel and crush the garlic cloves.
- Put the garlic cloves in a food processor and
chop to the desired size.
- Place parchment paper on the trays of your
dehydrator.
- Spread the garlic on the trays, ¼ inch thick and
as evenly as possible.
- Put in the dehydrator at 125 °F until the garlic
is completely dehydrated. *The time varies depending
on several factors (ambient humidity, food
moisture...).
- Put back in the food processor to remove any
clumps.
- Grind in a coffee grinder to obtain a fine
powder.
- Transfer to a spice jar.
